What is teriyaki sauce?

Teriyaki sauce is a Japanese marinade and glaze that typically consists of a combination of soy sauce, mirin (a sweet rice wine), sake and sugar. These ingredients are cooked together until the sauce reaches a thick, syrupy consistency. Teriyaki literally means "to shine" (teri) and "to grill" (yaki), which refers to the shiny coating that the sauce forms on meat or vegetables when it caramelizes during cooking.
