Origin & cultivation
Finca Los Alpes is nestled in the hills of the Colombian mountains, directly beneath the majestic "Farallones del Citará", surrounded by the Cochuana forest. This exceptional topography creates a unique microclimate characterized by the mixed air currents of the Pacific Ocean and the Cauca River Canyon. These climatic conditions allow the finca to produce coffee all year round, as there are two balanced rainy seasons that provide the coffee trees with flowers and then cherries twice a year.
The coffee is grown at an altitude of 1,650 to 1,950 meters above sea level, which ensures a particularly aromatic taste. Several rivers and waterfalls in the surrounding area ensure a continuous supply of water, which is crucial for the high quality of the beans.
Cultivation and processing
Finca Los Alpes was founded in 1974 and today specializes in 100 hectares of coffee cultivation, using only the Caturra variety. The cultivation is sustainable, while the rest of the farm is protected. The finca's wet mill enables the coffee to be processed precisely and gently. After de-pulping, the coffee undergoes a fermentation process lasting 15 to 19 hours, depending on the humidity. The coffee is then thoroughly washed and the drying process begins, which can take up to seven days.
Gentle roasting
The coffee beans are roasted in the farm roastery using a particularly gentle long-term roasting process to produce coffee that is low in acidity but extremely aromatic. This special roasting technique ensures that the full aromas of the beans develop without losing the pleasant mildness of the coffee.
Packaging
The coffee beans are delivered in high-quality, resealable packaging with an aroma valve to preserve the freshness and aroma of the coffee. This ensures that the coffee always remains fresh and aromatic, even after the first opening.
