Finally, the queen of pasta sauces has her own spice mix!
It's about time Germany's most popular pasta dish was commemorated!
Interestingly, Italians don't know "spaghetti Bolognese" - if you ever order this dish in Italy, the cellar will just shake its head and you will be fully exposed as a tourist.
In Italy, you order a "ragù alla bolognese"
"Ragù" is derived from the French verb "ragoûter" and means "to tantalize the palate"...
The classic ragù dishes originated near Bologna and were first mentioned in documents at the end of the 18th century. Ragù always refers to a slowly braised sauce with meat, fish or vegetables. The emphasis is on long and slowly braised - a good "ragù alla bolognese" should be simmered for around 2 hours... sounds unnecessarily long at first, but it's worth it, as the flavors can only combine perfectly over this long period of time!
And spaghetti is not served with bolognese sauce in Italy!
The reason for this is that thick pasta sauces do not stick well to thin spaghetti.
Tagliatelle, fettuccine, penne, rigatoni or pappardelle are better suited to thick sauces...
As always in Italian cuisine, it's all about the quality of the ingredients. The recipes are simple, but they do require a little time and love.
And there is no such thing as THE ORIGINAL recipe, every family in Italy has its own secret recipe, which has been passed down orally for many generations and mom's recipe is always the best anyway!
However, the Accademia Italiana della Cucina submitted the original recipe to the Chamber of Commerce in Bologna in 1982. The ingredients and preparation are specified here.
The fixed ingredients are carrots, celery, onions, tomatoes, coarse minced beef and pork belly (pancetta), olive oil, butter, salt & pepper, vegetable stock
The following applies to the preparation: sweat, sauté, stew and braise, the rest is then slightly modified depending on the secret recipe.
