[Vyrtse] Timut pepper
Origin
The untouched Nepalese mountain regions of the Himalayas are home to a spice plant that is still relatively unknown in this country but is very aromatic. Timut pepper grows here at altitudes of over 2,000 meters. This plant from the rue family is closely related to the Szechuan pepper. However, it is not a true pepper species like the black pepper. Botanists classify the Timut pepper as a member of the citrus family. Its botanical origin is also clearly reflected in the taste of Timut pepper. The plant combines peppery spiciness with the aroma of citrus fruits.
Timut pepper is still produced in the traditional way today. Pepper farmers carefully harvest the individual berries by hand and then dry them at low temperatures of around 40 to 60 degrees. This particularly gentle process preserves the diverse aromas. Due to its wild, original origin, Timut pepper is marketed as "jungle pepper", just like Cambodian Kampot pepper. Harvest time is traditionally in August.
Use
The rather medium-hot Timut pepper is indispensable in Asian cuisine, where it is often combined with hot chili varieties.
In order for timut pepper to develop its aroma optimally, the berries should only be crushed shortly before cooking. Use a high-quality spice grinder or mortar for this.
Taste
Timut pepper tastes pleasantly hot and fruity and lemony at the same time.
It is characterized by a tingling taste and a slight numbness on the tongue.
Goes well with
