Mistake 1: Saving at the wrong end
A good steak starts with the quality of the meat. A cheap discount steak will never achieve the taste and juiciness of a high-quality cut. We used a Wagyu steak for our test, but other high-quality steaks also deliver excellent results. Invest in good meat and you will be rewarded.
Mistake 2: The thickness of the steak
Many grill masters claim that a steak should be two fingers thick. But this is more macho posturing than a rule. If a steak is too thick, the ratio of roasted flavors to core temperature is not right. A thinner steak, especially with fatty Wagyu, produces better results, as the fat melts and distributes the flavor optimally. So try out different thicknesses to find your favorite.
Mistake 3: Too little roast flavor
An attractive grill pattern may look good, but it gives away a lot of flavor potential. Roasting aromas are created by the Maillard reaction, which provides the typical meat flavor. Instead of just creating a checkered pattern, the roasted aromas should be distributed over the entire surface of the steak. To achieve this, use a well-preheated grill zone or a top heat grill and turn the steak frequently to obtain evenly roasted flavors.
Mistake 4: Cooking at too high a temperature
Many people make the mistake of cooking the steak at too high a temperature. The ideal temperature is below 120°C. The lower, the better, as the steak is gently brought to the desired core temperature. Use a core temperature thermometer to find the optimum cooking point - pressure tests are inaccurate and unreliable.
Mistake 5: Leave to rest
Contrary to popular belief , a steak does not need to rest. Cooked gently at a low temperature, the steak is already perfectly relaxed and the meat fibers are balanced. Immediate cutting prevents the steak from cooling down unnecessarily and ensures that the meat juices remain in the steak.
