Ingredients and quantities
1. beer-mustard marinade
4 pork neck steaks, approx. 200-250 g each
2 onions (white or red)
3 tbsp Dijon mustard (or other mustard of your choice)
1 tsp salt
1 tsp pepper
200 ml malt beer (or dark beer)
2. simple spice marinade
4 pork neck steaks, approx. 200-250 g each
4 tbsp vegetable oil
2-3 tbsp spice mix (e.g. Steak Explosion)
3. herb marinade
4 pork neck steaks, approx. 200-250 g per piece
1 bunch of herbs (e.g. parsley, chives, basil)
4 tbsp vegetable oil
2 cloves of garlic
juice of 1 lime (or lemon)
1 tsp salt
1 tsp pepper
Preparation of the marinades
1. beer-mustard marinade
Cut the onions into rings and press lightly so that they lose their juice.
Season the pork neck steaks on both sides with salt and pepper.
In a large bowl, mix the mustard and onions with the steaks.
Pour in the beer and mix well.
Marinate the steaks in a sealed container in the fridge for 1-24 hours.
2. simple spice marinade
Season the pork neck steaks on both sides with the spice mixture to your own taste.
In a bowl, mix the steaks with the vegetable oil.
Mix well and marinate the steaks for at least 30 minutes (or up to 24 hours).
3. herb marinade
Roughly chop the herbs and place in a blender with the garlic, vegetable oil, lime juice, salt and pepper.
Puree everything to a smooth marinade.
Season the pork neck steaks on both sides with salt and pepper.
Pour the marinade over the steaks and knead well.
Marinate the steaks in a sealed container in the fridge for 1-24 hours.
Grilling the steaks
Preheat the grill to a medium-high heat.
Place the self-marinated steaks on the grill and grill over a direct heat for approx. 5-7 minutes per side until they have a nice crust and are cooked through.
Place the discount store steaks on the grill and grill over a direct heat for approx. 3-5 minutes per side.
Remove the steaks from the grill
Taste test
Beer-mustard marinade: Juicy, good roasted flavors, pleasant acidity.
Simple spice marinade: Simple and tasty, perfect roasted flavors, juicy.
Herb marinade: Fresh and aromatic, nice roasted aromas, very juicy.
The test showed that home-made neck steaks perform significantly better. They are juicier, have better roasted aromas and taste fresher and more aromatic overall. So the next time you grill pork neck steaks, try one of our simple recipes. You'll taste the difference!
