Origin
The original home of paprika is South and Central America. The people there have probably been using the fruit for many thousands of years. Christopher Columbus brought the plant to Europe after the discovery of America, but for a long time peppers were used almost exclusively as an ornamental plant. The Turks brought peppers to Hungary during their campaign of conquest through Europe, where the plant was very popular with farmers. Over the years, varieties were bred that were perfectly adapted to the cooler climate and fertile soils of south-eastern Europe. The paprika completely changed Hungarian cuisine and became an essential part of all typical national dishes. Today, Hungary is one of the most important countries for growing paprika and produces absolutely top quality peppers. Pure manual work during harvesting and sorting and strict monitoring of all processing steps, as well as gentle grinding in stone mills, preserve the full aroma and high color intensity.
Use
In Spain, pimentón is used in many traditional dishes such as chorizo sausage, paella or pulpo alla gallega. The smoked paprika also goes well with all dishes that require a smoky note.
