5 steps to the perfect burger!
Today I explain how you can easily make the perfect burger - the best burger in the world - at home. You'll also find out which mistakes you should avoid at all costs and what you need to pay particular attention to in order to achieve a perfect result. Let's go!
Step 1: The perfect sauce
The right sauce is the be-all and end-all for a perfect burger. I'll show you two options:
1. simple version:
A good mayonnaise
One of your favorite sauces (e.g. ketchup, barbecue sauce, hot sauce)
2. homemade burger sauce:
Mayonnaise
Ketchup
mustard
Worcestershire sauce
A small sip of pickle water
Sugar and salt to taste
Optionally, you can refine the sauce with finely chopped gherkins and onions. Cut the onion three-dimensionally to obtain particularly fine cubes. Another great addition is caramelized onions, which you can prepare in a pan using red onions or shallots, honey, salt and sugar.
Step 2: The perfect topping
A good burger lives from its fresh ingredients. Here are a few tips:
1. cheese:
Cheddar or a simple processed cheese is ideal. It is important that the cheese melts well.
2. tomatoes:
Use beefsteak tomatoes and slice them paper thin.
3. onions:
Finely chopped or caramelized onions are perfect.
4. bacon:
Crispy bacon adds extra flavor and crunch to the burger.
Step 3: The perfect burger buns
A burger stands or falls with its buns. Here are some recommendations:
1. brioche buns:
These are fluffy and buttery and are now available in almost every supermarket.
2. homemade buns:

Preparation tip:
Cut the buns open, spread them with butter and toast them on the grill. This gives them a crispy surface and keeps them fluffy on the inside.
Step 4: The perfect burger patty
There are two options:
1. ready-made patties:
You can put these straight from the freezer onto the grill and cook them medium.
2. homemade patties:
Form balls of minced meat (100-180 g) and press them flat on a hot cast iron plate or plancha. As soon as the underside is brown, turn the patty over and place cheese on top. Wait until the cheese has melted.
Seasoning:
Season the patty with salt and pepper while grilling.
Step 5: Finishing the burger
Now assemble the burger:

Bottom half of bun:
Spread with sauce or mayonnaise.

Burger patty:
Place on top with cheese.

Topping:
Add onions, tomatoes, bacon and lettuce if desired.

Top half of the bun:
Also spread with sauce and place on the burger.
Press the burger together lightly so that the flavors combine. Enjoy your perfect burger when it is hot and fluffy.
Insider tips at the end:
Butter too hard? Use ghee or beef fat for the bun instead.
Special flavor: A little wagyu fat on the plancha gives the patty a special flavor.
